I promised lately to share the chocolate cookie recipe that was one of my go-to recipes in the month of April, so the recipe is here! Hope you will like it!
As you will see from the ingredients and my comments, the recipe is versatile, so feel free to use your imagination and enjoy these delicious home-made cookies at home! I found this recipe on Beata Nicholson cooking website. Beata Nicholson, who among many talents is also VERY good at cooking (own TV cooking show, multiple cooking books!), says that these cookies take minimal time to bake and you can come up with a wide variety of options playing with all kinds of nuts, chocolates and so on. - 100 g. of white/milk/black chocolate (I used 72% cocoa chocolate)
- 2 handfuls of nuts (pecans and hazelnuts would be best), cut into pieces (I didn’t use any)
- 120 g. of butter
- 150 g. of brown sugar (if no brown, you may use white) (I used only 50 g. of brown sugar, so cookies are not too sweet and I can eat more :))
- 1 egg
- 150 g. of flour
- 2 tablespoons of good dark cocoa
- 1/2 teaspoon of baking powder
- Vanilla sugar or extract
Melt the butter, add sugar, an egg and mix well. Sift (I mixed with a spoon) the flour together with the baking powder. Add cocoa, flour with baking powder, nuts and chopped chocolate to the butter and sugar mass, mix well. The dough should come out thick, almost not scratching from the spoon. Line the pan with baking paper and place one full teaspoon.
You will get little cakes that may look a bit messy, but they will change their shape during baking. Bake in 180-200C oven for about 10-15 minutes. Remove from the grill and cool. When removed from the oven they may appear too soft, as if uncooked, but it is only a deception, because when they cool down, they become harder… My recommendation is not too bake them for more than 15 minutes, as otherwise they may become too hard once they cool down. That’s it!
