Recipe: Ricotta Cheese Snack

Are you enjoying your week so far? My week has been pretty productive and I start thinking about the weekend menu at Loreta’s Kitchen. Hence, as promised in my last post, I’d like to share I recipe for a pretty healthy snack option that will be on repeat this weekend. It’s not my recipe, I found it on a Lithuanian food diary ‘Agnes Uzrasine’, so my Lithuanian speaking friends may visit the page for the recipe here.

And for those of us who speak English, please find the translation below. As we can’t travel that much today, maybe it could be a snack that will bring some Italy and Italian taste for the weekend?

Ingredients, you will need:

  • 250 g of ricotta cheese
  • 8 sun-dried tomato slices in oil
  • 50 g of hard cheese
  • 6 hazelnuts (you may add more, I added at least double)
  • fresh or dried basil
  • 1 large or several small cloves of garlic
  • Salt, pepper
  • 7-8 lavash pancakes (you may opt for 1-2, depending on how much ‘bread snack’ you want, see in the picture below)
  • Olive oil
  • Thyme

Cooking, super easy and quick:

CREAM SNACK: Spin the ricotta cheese well with a spoon or better yet – with a mixer, throw in the chopped tomatoes, grated hard cheese, chopped garlic, chopped or mixed nuts (I used a blender for the nust) and chopped basil, add salt and pepper.

‘BREAD SNACK’: Spread olive oil around all the sides of the pancake – the whole pancake should be covered in olive oil from both sides, I did it with my fingers. Sprinkle with thyme, roll into a roll, cut into diagonal pieces of about 4-5 cm long and shoot in the oven to bake. I baked for about 10min at 200 degrees, the bread should become sort of golden colour, then it’s ready!
